Creamy Mango Popsicles

It is HOT here in west Texas! There is no better way to cool off than with a delicious, creamy popsicle. I make these at home because it is too easy. Seriously, throw a few ingredients in the blender, pour into molds, freeze for a few hours (that’s the hardest part), and enjoy. Also, have you ever read the ingredients on store bought popsicles… high fructose corn syrup, artificial colorings… no thanks!

So enough talk, lets get to it!

Ingredients
  • 3 cups mango chunks
  • 1 cup yogurt (read notes for subs)
  • 2 TBSP maple syrup
  • 1 TSP vanilla extract
  • 2 scoops collagen peptides
Ingredients I used (this time)

** NOTES: I buy frozen mango chunks in a 5 pound bag at costco. For the yogurt, you can make it dairy free by substituting with a coconut or nut based yogurt, or even coconut cream or full fat coconut milk. This batch was very thick and creamy, so adding liquid such as nut milk can help thin it out a bit, but we love ours super creamy.

Directions
  • Blend all ingredients in a high speed blender or food processor (You may have to pause to scrape down the sides to incorporate everything)
  • Pour mixture into molds, careful not to overfill them
  • Insert popsicle sticks or follow directions for your molds
  • Freeze about 6 hours, or overnight
  • Remove from freezer, and let sit for a minute to thaw out or run under warm water for about 30 seconds, so popsicles come loose from mold.
Everything blended up into a delicious, creamy mixture. You could store this in a container in the freezer, and use an ice cream scooper to scoop into a bowl

** You can store the popsicles by removing them from the molds, and putting them in an airtight container. They will store in the freezer for about a week. But really… a week… ours never make it past a day!
